Pronounced [Dark Doo loch] and a Guild of Fine Foods 3 Gold Star Great Taste Award 'Exquisite' 2021 winner, twice happy recipient of 1 Gold Star at the 2017 & 2018 Great Taste Awards, Silver Medal at British Charcuterie Awards 2019. Literally means 'Dark Black Loch' and the colour of an old friends eyes. Truly awesome piece of charcuterie.

Traditionally dry cured, cold smoked Treacle & Dark Ale bacon. Dark liquoricey treacleness bursting with calm, warm flavours, beautifully smooth and well rounded - a wonderful flavour profile! Exquisite taste with superior fine fat for an incredible yum munching sensation.

Cooking: Done in 10 seconds flat - high heat, frying pan, no oil, 5 seconds side one and 5 seconds side two is how we like it. Put on the extractor fan! Doesn't take long, seriously this is a different beast than you may be used to so treat as you would a loved one. We eat it without cooking it but that's our secret.

Pairing:  Beef burgers, mussels, wrapped around scallops, fish soups. Noshed on a roll is good too. Stuffed into chicken, flash fried for a quick family snackcident, figs and nectarines, peaches and greeky type yoghurt stuff ... you know Mediterranean stylee...anything, mix it up folks.

History: Said to be favoured by the ancient Celtic warlords from around here. Mainly eaten to give strength and insight and was the weapon of choice before the Celts kicked Roman ass at Mons Grapus just over the hill, a 'faodail', traditional, ancient, secret recipe.
