Handcut lardons - Peppercorn, Bay and Wild Juniper.

Using the best Pancettas, these energetic wee things are delightful bundles of tastiness and even to hold they're tactile funkers. They are Bacon max and waxy, flavour punching anarchists of the culinary world and they're welcome citizens of our portfolio. Don't be scared of them, they're good people.

Allergens: Garlic.

Cooking: Done in 60 seconds flat - high heat, frying pan, no oil, 30 seconds side one and 30 seconds side two is how we like it. Put on the extractor fan! Doesn't take long, seriously this is a different beast than you may be used to - treat as you would a loved one.

Pairing: Succulent, light and fresh they'll vitalise any dish, stab them with cocktail sticks and have them as a moreish Hors d"Oeuvre, as a side with scrambled eggs, or part of a classic British breakfast. At home within the creaminess of a quality Carbonara using egg yolk to cream it up or go for a potatoey, bechemal croquette deep fried on bread crumbs, now you're talking!

History: We'll be honest, these were developed through Health and Safety reasons and concerning a really sharp blade, these YEBS Tigers (Yummy End Bits) are cut 10mm thick and cubed by cross-eyed Mike into thousands of dice. He still has all his fingers.

Note: These are hand cut lardons and we cannot guarantee uniform sizes in each pack. However, we do try really hard to make sure that the lardons are all approximately the same size so we can help you guys perfect your cooking skills by having uniform cooking times.
