Celtic N'Dubhya (pronounced N'Duja) - Chilli Paprika Spreadable Salumami aka Kulinary Kryptonite.
Our Celtic N'Dubhya is Kulinary Kryptonite. Made with smoked Chipotles and loads of high-quality Paprika. A fatty, melt in the mouth, bacon 'fudge' with a stated 'kick' at the end that craves to linger on and on and on. This Salumami is sophisticated. Cooking: Best mixed with other major ingredients like ground pork or beef for con carne or burgers or diluted in soups to add humungus umaminess to virtually any dish prior to cooking. Or tear wee chunks off and place on your pizza or on top of a sauce to savour as it is. NB: Don't fry the entire N'Duja sausage like a burger and eat it - this stuff needs to invade other ingredients to draw it from it's cage. It bites!
Pairing: Man you'll be amazed at what you can use this stuff for. Pull off in small pieces and 'daub' onto Pizzas. Break up the packet and mix with mince for a great burger mix. Whisk it through soups or, check this, make it into cold Gaspachio drinks (fry some garlic, onion and N'Duja add tomato soup, cool strain and chill - add vodka and ice) oh my goodness!
History: I went to Calabria and took some lessons from a Grand Master out there. He showed me N'Duja, this spreadable cured pork sausage. They make it 50:50 with pork to Paprika and it is immense. I messed with the recipe and now we present Celtic N'Dubhya.
