Chilli and Paprika Lardons
Not macho 'hoocha hot', decent chilli warmth. Beautiful quality smoked and sweet Paprika rounding it off. Superb.
Cooking: Done in 90 seconds flat - high heat, frying pan, no oil, 60 seconds side one and 30 seconds side two is how we like it. Put on the extractor fan! Doesn't take long, seriously, this is a different beast than you may be used to, treat as you would a loved one, like... your Nana.
Pairing: Fried off quickly until crispy and tender inside, and delivered warm into proper quiche Lorraine, again anything piquant Italian or Spanish, delicate wee spicy kebabs. Corn Hogs or to add some oomf to a curry.
History: Named after our young Charlie who perished in 1st Battle of the Somme (Bapaume) - 22/3/18 - he was no doubt a brave, brave man and for that his family, and the Kingdom, are rightly proud. A strong, forthright bacon that we reckon he'd be proud of too. Stand up Charlie you're called up again fella this time as a living legend.
