



Pannanich Sprite - Streaky Bacon
Fennel, Lemon Singing Bacon
All you're probably looking for in an Italian, beautiful bombshell. Fresh, clean and a wild streak of a well loved heritage running though it. For Baconeaters needing to live a dream....this is fantastico!

Cooking: Done in 60 seconds flat - high heat, frying pan, no oil, 30 seconds side one and 30 seconds side two is how we like it. Put on the extractor fan! Doesn't take long, seriously, this is a different beast than you may be used to - treat as you would a loved one.
Pairing: Full of classic, Italian rustic Tuscan - needs to be tamed and treated with respect - delicate but has a point to make. We'd have this on a sourdough something like a Ciabata with some succulent and sweet sundried Tomatoes. Si, si, si.
History: The Pannanich Sprite was created using botanicals from "Lost Loch Spirits" Murmichan - Scotlands first Absinthe and located just a 12 miles West from our Piggery-Smokery HQ. We've been out several times to see the lads and they use "a mixture of traditional and Scottish botanicals including grande wormwood, roman wormwood, green aniseed, fennel seed, hyssop, star anise, lemon balm, mint leaves, bramble leaves, lemon thyme and heather flower, and distil Deeside heather, clover and willow herb honey giving our Absinthe a unique taste and mouth feel."
Well this yummy taste rolls over into this wee Devil which, if you're not careful, will make you consider taking your ear off in ectasy. We called Pannanich Sprite after the ancient well water that Murmichan is made from. It has a beautiful Fennel overtone with a bright finish from Lemon Balm and Lemon Grass and is a must for Baconeaters everywhere - a seriously bright and tasty Bacon.
